GREEK  HALVAS


Ingredients:

 

  • ½ cup olive oil

  • 2 cups fine semolina

  • 2,5 cups sugar

  • 4 cups water


You may also add at your preference:

  • ½ cup raisins

  • ½ cup almonds

  • 1 lemon peel

  • 1 orange peel

  • 1 cinnamon spill

 

Preparation method:

  1. In a pot we boil water, sugar,( if you want you may add lemon peel, orange peel, cinnamon spill) stirring frequently. When it takes 2-3 boils, remove it from heat.

  2. In a heavy-bottomed saucepan, add olive oil to warm. Add the almonds, stir it continuously with wooden spoon till gold color.

  3. Add the semolina and stir it continuously with wooden spoon till gold brown color.

  4. Remove from the heat, add the water mixture (remove before lemon peel, orange peel, cinnamon spill) to the semolina with a deep spoon.

  5. Stir slowly, constantly and carefully.

  6. Replace the halvas on a low heat and stir for 1 min. until thickened.

  7. Place in mold or in ramekins and allow to cool for 1 hour.

  8. Tilt the halvas, sprinkle with cinnamon.
